Vegan Cranberry Orange Bread Recipe! This bread is so delicious and perfectly moist. Great for gift-giving and the holiday season.

Cranberry + Orange + Ginger + Walnuts. If fall flavors had a baby, it would be this bread. Warm, cozy slices of tender cranberry bread is hands down my favorite way to ease into the day. I’ve made this bread exactly 4 times in the past two weeks because as soon as I finish the last slice, I’m craving it again.

I set out to make my favorite Cranberry Orange bread and was immediately swayed by the need to add ginger and walnuts. If they didn’t go so perfectly together, it might be weird, but the moment you take a bite, you realize that cranberries and ginger were made for each other.

Ingredient Notes and Substitutions

To keep this recipe vegan, you’ll want to use vegan butter like Earth Balance baking sticks and a flax egg instead of a regular egg. To make a flax egg, whisk together ground flax seed with water to gel before adding to the wet ingredients.

Fresh cranberries are a must for this one. They add a nice tartness to this cranberry orange bread, especially with orange juice and walnuts. I don’t recommend substituting dried cranberries for fresh. You can use fresh from frozen cranberries. I often buy a few bags of cranberries each year when they are in season and then keep them in the freezer to make this bread, my orange cranberry muffins, oatmeal cranberry muffins, and my healing cranberry smoothie.

I also recommend 100% fresh orange juice and not a blend as some juice blends have added ingredients that may not work in this bread. For extra orange flavor, I recommend juicing fresh oranges and then also adding in fresh orange zest!

Lastly, I love the addition of chopped walnuts, but you can omit them if you desire a nut-free option. Pecans or almonds also work.

How to Make this Cranberry Orange Bread

Whisk together the Dry

Whisk together the dry ingredients in a large bowl

Beat the Sugar

Beat the sugar and butter together until creamy, which you can do with an electric hand mixer (affiliate) or a stand mixer. Add in the rest of the wet ingredients.

Add in the dry

Slowly add in the flour mixture until just combined. Pour into a greased loaf pan and bake until golden brown on top and a toothpick comes out clean.

Tips for Success

You’ll want to cream the butter and sugar together before adding in the other wet ingredients, and I think an electric hand mixer or stand mixer is best for this.

Fresh cranberries are a must for this cranberry orange bread and add a much different flavor and texture than using dried cranberries. You can use frozen cranberries!

I think this bread is perfect as it is, but if you want to serve with a sweet orange glaze then you can thin a little powdered sugar with orange juice and drizzle over the warm loaf.

Store any leftovers in an airtight container on the counter or the fridge for 3-4 days.

I’d like to make the motion that homemade bread is the most perfect hostess gift. As a fellow food lovers, I know you understand the anxiety when your host tells you not to bring anything. I refuse to show up to events empty-handed, and I love the idea of bringing a loaf of bread to enjoy for breakfast the next morning.

Wrapped, homemade bread is the perfect thing to arrive with. It’s a sweet way of saying, enjoy your evening, but don’t worry about breakfast the next day- have a slice of this and a cup of coffee instead.

To wrap, skip the plastic wrap (it will make the bread gummy) or foil and opt for parchment/wax paper instead. Cut a length of wax paper about four times the width of your loaf, and place the bread in the center. Combine the ends of the paper together above the bread, then fold the paper down several times in two or three crisp folds until it’s flush with the top. If you have extra width on the sides, fold and tuck under. If not, trim off any excess so it’s flush with the bread, then secure with a pretty piece of twine and ribbon.

Cranberry Orange Ginger Bread

Vegan Cranberry Orange Ginger Bread! This healthier cranberry orange bread recipe is loaded with flavors of fall.

Ingredients 

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 3/4 teaspoon ground cinnamon
  • 1/4 cup butter or vegan butter, I love Earth Balance brand, melted
  • 1/4 cup cane sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup orange juice
  • 1 tablespoon white vinegar
  • 1 tablespoon ground flax seeds + 3 tablespoons water, combined to make a gel ‘egg’
  • 1/2 cup chopped walnuts
  • 1 cup chopped fresh cranberries

Instructions

  • Preheat oven to 350 degrees F. Spray and lightly flour a 9×5 inch loaf pan and set aside.
  • In a medium bowl, whisk together the flour, baking powder, salt, baking soda, ginger, and cinnamon.
  • In a separate large bowl, beat together the butter and sugar until smooth. Stir in the vanilla, orange juice, vinegar, and gelled flax egg. Slowly add the flour mixture until just moistened, then stir in the walnuts and chopped cranberries.
  • Pour into prepared pan. Bake for 55 minutes or until golden brown on top and toothpick comes out clean.

Notes

To make this bread vegan, I am using a flax egg in place of a regular egg. To create a flax egg, whisk together 1 tablespoon ground flax meal with 3 tablespoons water in a small bowl. Set aside to let gel slightly, about 5 minutes, while you prepare the rest of the ingredients.
