Easy Peach Crisp for Two! This vegan peach crisp is perfect for summer nights when you want an easy dessert without a lot of effort. Serves two!
Dessert for two? YES PLEASE. I’m currently in the phase of my life where I love dessert. I spent a good chunk of my early 20’s proudly refusing after-dinner treats. Too much sugar, too many calories, too much enjoyment. I was far more content in how I looked than what I needed.
And then? I stopped. I found my happy weight and realized that life really is too damn short to not enjoy dessert. A good friend and I were talking about this last week; the nurturing season of life that happens after you become a mom. I used to push myself so hard. I pushed myself physically, driving to the next best thing over and over again, even if it left me completely exhausted.
I’m rarely there these days. I’m so much softer, gentler with myself. I still love my vegetables and try to eat mostly plant-based, but I order pizza (often) and eat dessert (even more often). And I don’t care. Or, rather, I do these sans guilt. It’s so incredibly freeing and I feel very lucky that I found this place relatively early in life.
So let’s eat this peach crisp on a Monday night. Let’s live a little! Serves just two and takes mere minutes to put together.

I hope you are finding peaches as good as I am right now. I took Vander peach picking last weekend and we’ve been feasting on them ever since. You know it’s a good peach when the juice won’t stop running down your chin.
Since these easy peach crisps are only lightly sweetened, the better the peach, the better the dessert.
Peel (if you want) and slice the peaches, then place them in the bottom of a ramekin. Top with a quick mix of flour, oats, butter and baking powder and bake.




It goes without saying that this tastes even more amazing a la mode. Warm peach crisp with ice cold vanilla ice cream — It doesn’t get much better than this.

Easy Peach Crisp for Two

Ingredients
- 2 cups fresh peaches, peeled and diced
- 1/8 cup flour
- 1/8 cup oats
- 1/4 teaspoon baking powder
- 2 tablespoons brown sugar
- 2 tablespoons chilled salted vegan butter, cut into small pieces (I use Earth Balance)
Instructions
- Preheat the oven to 375 degrees F.
- Lightly spray two ramekins with cooking spray, then place 1 cup peaches in each, pressing them down to fit.
- In a small bowl, combine together the flour, oats, baking powder and brown sugar together. Add in the butter and mix together with a fork until small, sand-like clumps form.
- Place half of the mixture on each peach ramekin, gently pressing down to stick.
- Place in the oven and bake for 20-25 minutes until bubbly and golden brown. Serve as is, or with a scoop of ice cream on top (THE BEST. DO IT.)
