Favorite Vegan Cinco De Mayo Recipes

1. Roasted Corn Salsa – a nice alternative to classic salsa {vegan, gluten-free}

2. Black Bean & Spicy Cashew Cheese Tacos– a new favorite taco combo. Spicy & filling! {vegan, use corn tortillas for gluten-free}

3. It’s not really cinco de mayo if I’m not eating this guacamole. {vegan, gluten-free}

4. A healthy take on mexican fare, weeknight tortilla soup. {vegan, gluten-free}

5. Pepita Salad. Enjoy this hearty salad on it’s own or pair with tacos or tortilla soup. {vegan, gluten-free}

6. A dessert must: mexican hot chocolate brownies. {vegan}

7. A refreshing take on the classic: blackberry margaritas. {vegan, gluten-free, awesome.}

I have always been a big fan of cinco de mayo. Any holiday that I get to celebrate with guacamole and tacos get’s a big A+ in my book. That being said, I avoid our local mexican restaurants like the plague around this time. I prefer to celebrate in the comfort of my own home, away from the crowds, where I can enjoy all the avocado & margaritas that I want.

I haven’t decided exactly what we will be having on Monday, but I’m sure it will be a combination of some of the above fare. What’s are your menu?

      I must admit, I usually forget about Cinco de Mayo until it’s too late, thus missing out on all the festivities. Thanks to your inspiring list though, the holiday never sounded so delicious- There’s no way I’ll forget this year!

      All these recipes are right up my alley. I love Mexican food. I’m definitely going to have to make some tacos and guac for dinner on Monday!
