Fresh Pineapple Salsa

A little sweet, a little spicy, this fresh pineapple salsa recipe is a must for both taco night and parties! Easy to make with only six ingredients. Naturally vegan and gluten-free.

Fresh pineapple salsa! Inspired by a recent meal that we had in Traverse City, Michigan, last month. The moment my husband took a bite– he looked at me and said, you’ve gotta make this for home!

So, here we are. A fresh salsa recipe with pineapple, bell pepper, jalapeno, fresh lime juice, cilantro, and red onion. Simple and fantastic– enjoy it with tortilla chips, on taquitos, and my favorite way to eat it, with my blackened tofu tacos.

Recipe Ingredients

This pineapple salsa is so easy to make– all you need is 6 ingredients:

  • Fresh pineapple
  • Bell Pepper
  • Jalapeno
  • Fresh Cilantro Leaves
  • Lime Juice
  • Red Onion

Ingredient Notes

As with most simple recipes, you want the freshest ingredients that you can get. A ripe pineapple really makes this recipe, and I highly recommend seeking out the sweetest, juiciest pineapple you can find.

There are a few different brands that are marketed as being extra sweet, and I think they are worth the extra dollar or two. For this recipe, I used honeyglow pineapple.

For color, I like using a red bell pepper or an orange bell pepper, but any will work. I highly recommend using red onion instead of another onion variety, as red onion has a better flavor for fresh salsa. Red onion is my preferred choice for most of my salsa recipes, like my pico de gallo, peach habanero salsa, mango salsa, and cherry tomato salsa.

Tips and Variations

If you want this pineapple salsa spicier, then I recommend adding in more jalapeños. You can also use a spicier pepper, like a serrano or Thai chili pepper.

For a heartier salsa, you can add black beans. I love black beans in a fruit salsa like this, which is what I do in my mango and black bean salsa. This adds a boost of protein and fiber.

As the sweetness of the pineapple is really the key in this recipe, it’s best to make it with fresh, in-season, sweet pineapple. That said, if you don’t have fresh pineapple, then you can sub in canned pineapple or thawed frozen pineapple. It won’t have quite the same texture and taste but will work.

What to Serve with Pineapple Salsa

I like this easy pineapple salsa recipe with tortilla chips, but it also goes great with spicy crispy tacos, taquitos, or even my lentil tacos. Really, it’s great with any spicy food! The refreshing pineapple pairs well with spice. Try it for your next taco night or as an appetizer for your next party.

Anywhere you like fruity salsa, you can use pineapple salsa! It’s great on top of grilled protein or stirred into cooked and cooled couscous or farro for a summer salad.

Ingredients 

  • 3 cups finely chopped fresh pineapple
  • 3/4 cup finely chopped bell pepper
  • 1 jalapeno, seeded and finely chopped
  • 1/4 cup finely diced red onion
  • 1/4 cup finely chopped cilantro
  • 1 lime, zest and juice (about 2 tablespoons juice)
  • 1/4-1/2 teaspoon salt

Instructions

  • Place all ingredients into a medium bowl and toss together. Season to taste with salt.

Notes

The key to success for this recipe is to ensure all the items are finely chopped. That allows you to enjoy some of the sweet pineapple, spicy jalapeno, fresh cilantro, and onion all in one bite.
This pineapple salsa will keep for 1-2 days in the fridge.
As most of the flavor for this salsa comes from the pineapple, I highly recommend only using a ripe pineapple. If you can find a honeyglow or extra sweet pineapple (specifically bred for sweetness), it makes a difference!
