Green beans almondine is one of my favorite easy side dishes to make for dinner. It comes together in just 15 minutes, is loved by everyone, and is a delicious way to enjoy green beans!

I love a green side for most meals, but especially for the holiday table. Recipes like my healthy creamed spinach or kale and apple salad usually appear along with these green beans almodine.

These are such a delicious side dish and once you make them, I know you’ll turn to this recipe over and over again because they’re just so simple and effortless to put together.

What Is Green Beans Almondine?

Green beans amandine, also known as green beans almondine, is a classic French dish that features tender green beans sautéed in butter or olive oil and seasoned with salt and pepper.

The green beans are then finished with a generous sprinkle of toasted slivered almonds, which add a delightful crunch and nutty flavor. This elegant side dish is perfect for any occasion, from a weeknight dinner to a holiday feast.

Ingredient Notes

You’ll need a pound of trimmed fresh green beans for this recipe, but you can double or triple this recipe– especially if you make these green beans almondine for a crowd. Thinner, haricot vert green beans can be used too.

I use olive oil for a heart-healthier spin, but you can also use butter or dairy-free butter if you’d like.

You’ll also want to make sure you use raw sliced almonds so they can toast in the skillet until golden brown and fragrant. You can also use slivered almonds instead of sliced almonds. Or, in a pinch, if you purchase already toasted almonds, then you’ll add them near the end of cooking so they don’t burn.

I prefer the sweeter taste of sauteed shallots over onion or garlic cloves, but you can also sub in either one if you prefer.

Lastly, I think the addition of fresh lemon juice and zest is what really makes these green beans almondine pop, and I don’t recommend skipping it.

How to Make This Green Beans Almondine Recipe

Blanch the Green Beans

Add the green beans to salted water and boil until just crisp tender and bright green, than drain and rinse in cold water

Cook the Shallots

Cook the shallots and sliced almonds until toasted and golden brown

Tips for Success

You want to cook the green beans first in salted boiling water to help to preserve their color and tenderize them before adding to the pan with the shallot and almonds.

To save time, I don’t worry about transferring them to an ice bath as is traditional when blanching green beans, but instead, just drain them and then quickly rinse them in cold water. This will stop the cooking process and help to preserve the color.

For ease, I’ll often buy green beans that are already trimmed and cleaned, but if you don’t then you’ll need to prep them first. Start by rinsing them thoroughly under cold water to remove any dirt or debris. Next, trim off the ends of the beans, and if they feel stringy, pull off the fibrous string along the seam.

Ingredients 

  • 1 pound green beans, trimmed
  • salt
  • 2 tablespoons olive oil
  • 1 shallot, thinly sliced
  • 1/3 cup sliced raw almonds
  • 1/2 lemon, zest and juice
  • Freshly ground pepper

Instructions

  • Bring a large pot of salted water to a boil. Add the green beans and cook for about 4 minutes until just softened and bright green, drain and rinse in cold water.
  • In a large skillet, heat the olive oil over medium heat. Add the shallot and a pinch of salt (about 1/4 teaspoon to start) and cook until softened, about 5 minutes. Add the raw almonds and toast until golden brown, about 1-2 minutes.
  • Add in the cooked green beans, lemon zest and juice. Cook until warmed through, then taste, seasoning with salt and pepper as needed.

    Made these for Thanksgiving this year. Wayyy above steamed green beans thrown in a bowl, but just about as easy. I had to send the balance home with Sis and promise Husband to make more the next day. A great dish for so little effort and very tasty.

    I love this recipe so much I’m making it for Christmas!

    It’s wonderful on it’s own but has limitless possibilities.
    Served over jasmine rice this dish became a fabulous vegetarian meal
