Peanut Butter and Jelly Granola Bowl

Peanut butter and jelly granola bowl! Creamy yogurt topped with macerated strawberries and homemade salted peanut butter granola.

It was only a matter of time before I combined my salted peanut butter granola with my macerated strawberries to create this pb&j granola bowl.

It’s great as a breakfast, but I’ve also been loving it as a dessert– when I want a little sweet snack after dinner but don’t want something super sweet. And, these peanut butter and granola bowls are it.

The only prep is making the salted peanut butter granola ahead of time– which, I recommend doing anyways as a yummy snack to have on hand (it’s also great on salad, like croutons! Trust me on that.)

You can use any berries you like, but I love my macerated strawberries for an extra sweet treat.

Tips for Success

You can easily make this granola bowl dairy-free by using a coconut or soy-based yogurt. I do like a thicker yogurt for this bowl to stand up to the granola clusters and the berries.

For easy meal prep, make the salted granola ahead of time and the berries up to the night before. If you make the berries too far ahead of time, they will be mushy by the time you serve them.

I like to drizzle maple syrup or honey over the bowl for extra sweetness, along with a sprinkle of hemp seeds for extra crunch!
