Remember that amazing cashew cheese that we made earlier in the week? After you are done slathering it on crackers, toast, hot pasta, veggies and more– then you’ll want to make this sandwich!
As a long-time vegetarian, mostly vegan eater, sandwiches still seem to be the elusive category where it’s hard to find good veg sandwiches. Most sandwich places have only a lone cheese sandwich as the meat-free option (or worse! A roasted veggie sandwich. Gross.) which isn’t exactly inspiring.
As someone who loves to pack a sandwich for work, I often get stuck in a rut. I love hummus, but I can’t eat a hummus sandwich day to day. This cashew cheese vegan sandwich changes everything! It’s the ultimate texture sandwich– creamy cashew cheese, crunchy vegetables, soft toasted bread. Oh man, we are elevating the vegan sandwich experience.

You guys know that even though I develop recipes for a living, I’m rarely tied to following a recipe exactly. Put whatever veggies you want on this. I love the combo of tomato, avocado, cucumber and arugula though sprouts, shredded carrots, bell peppers would all be delicious.
I’m also a sucker for pickles and banana peppers, both good options. Put whatever your heart desires on this one, I promise it’ll be good.

Once you make the cheese, it will keep in the fridge for up to 5 days which I think is just perfect. That’s enough to make these veg cheese sandwiches throughout the week and then you’re done to enjoy something different next week.

Cashew Cheese Veggie Sandwich

Ingredients
- 2 tablespoons Herbed Cashew Cheese
- 1/4 avocado, sliced
- 1/4 cup sliced cucumbers
- 2 slices tomatoes
- 1/4 cup arugula
- 2 slices Sourdough Bread, or other favorite bread
Instructions
- Lightly toast the bread, then spread the cashew cheese liberally on each side.
- Layer with sliced tomato, cucumber, avocado and arugula leaves. Cover with other slice of bread, slice and serve!
