The easiest way to enjoy Air Fryer Zucchini, no breading required! Air Fryer Zucchini Chips with Spicy Sriracha Dipping Sauce. A fun snack, appetizer or side-dish.
1/3cupraw cashews, soaked for 15 minutes in hot water, then drained
1tablespoonolive oil
pinchsmoked paprika
1/4teaspoonsalt
1teaspoonmaple syrup
Instructions
Thinly slice the zucchini, then toss well with the olive oil, salt and pepper. The zucchini should be well coated with the oil, salt and pepper and depending on the size of your zucchini you may need 1-2 tablespoons.
Preheat your air fryer in 350 degrees F and place zucchini in a single layer and cook for 7-10 minutes until crispy and golden brown. Check around 7 minutes, and shake halfway through.
While the zucchini is cooking, place all of the ingredients for the sauce in the base of a blender or small food processor and puree until very creamy and smooth, scraping down the sides as needed. Depending on the power of your blender, it may take 1-2 minutes. Season to taste, adding more salt/smoked paprika as desired.

*For a more smoky/milder sauce, substitute in chipotle sauce instead of sriracha
