Ingredients
1head broccoli
3clovesgarlic, minced
3tablespoonsextra-virgin olive oil
Salt and freshly ground black pepper
Instructions
Trim the woody end of the broccoli and peel the outer stem. Slice the florets into thin stems, keeping the floret and stalk part attached.
Finely mince the garlic cloves and use the side of a large knife to press the minced garlic into a cutting board. Continue to go back and forth along the minced garlic until a paste is formed. Place the paste in a small bowl and whisk in the olive oil and a good pinch each of salt and pepper.
Bring a large pot of salted water to a boil. Add the broccoli to the salted water and cook until bright green and tender when pierced with a fork, about 3 minutes.
Remove the broccoli and place in a large bowl. Add the dressing and toss to combine. Season to taste, and serve at room temperature.
Notes
This one tastes best at room temperature, so if you make it ahead of time, then bring to room temperature an hour or two before serving.
