Toss the broccoli with oil and a generous pinch of salt and pepper. place on a baking sheet in a single layer and roast until crispy and slightly charred, about 25 minutes. Keep an eye on the broccoli to make sure it doesn't burn.
Before serving, lightly toast the pita bread to warm it enough so that the mozzerella slightly melts.
Add the mozzerella to the pita bread along with charred broccoli and peppers. Enjoy immediately.
