3cupsfinely chopped fresh pineapple
3/4cupfinely chopped bell pepper
1jalapeno, seeded and finely chopped
1/4cupfinely diced red onion
1/4cupfinely chopped cilantro
1lime, zest and juice (about 2 tablespoons juice)
1/4-1/2teaspoonsalt

The key to success for this recipe is to ensure all the items are finely chopped. That allows you to enjoy some of the sweet pineapple, spicy jalapeno, fresh cilantro, and onion all in one bite.This pineapple salsa will keep for 1-2 days in the fridge.As most of the flavor for this salsa comes from the pineapple, I highly recommend only using a ripe pineapple. If you can find a honeyglow or extra sweet pineapple (specifically bred for sweetness), it makes a difference!
