Honey Pear Muffins! These lightly sweetened muffins are perfect for breakfast or snack.

Ingredients
2/3cupwhole-wheat flour
1cupall-purpose flour
1teaspoonbaking powder
1/2teaspoonsalt
1teaspoonbaking soda
1/4teaspoonground ginger
1/8teaspoonground nutmeg
1teaspooncinnamon
large egg
1/2cuphoney
2/3cupunsweetened milk of choice
1/3cupneutral oil of choice
1 1/2teaspoonsvanilla extract
1 1/2cupsfinely diced pears
1/3cupold fashioned rolled oats
1/2cupfinely chopped walnuts
Instructions
Preheat oven to 350 degrees F. Line a muffin tin with paper cups or lightly spray with cooking spray. Set aside.
In a large bowl whisk together the flours, baking powder, salt, baking soda, ginger, nutmeg and cinnamon until just combined.
In a separate mixing bowl, stir together the egg, honey, milk, oil and vanilla extract until just combined.
Add the wet mixture to the flour mixture and stir to combine, then gently fold in the chopped pears, oats and walnuts trying not to over mix the batter; stir until just combined.
Spoon the mixture into the muffin cups, filling them 2/3s of the way (about 1/4 cup).
Bake for 18-20 minutes, or until toothpick inserted comes out clean and tops are golden brown. Remove from oven and let cool completely on a cooling rack.
Notes
For a yummy bakery-style muffin, I like to mix a little brown sugar, rolled oats and chopped walnuts and sprinkling on the muffins before baking.
