Ingredients
6cans jackfruit in brine, drained
Instructions
Place jackfruit in a large stockpan and cover with water. Bring to a boil and cook for 45 minutes.
Drain, then rinse with cool water. When cool enough to handle, shred the jackfruit by pulling apart the pieces and separating as many strands as possible. Place back into the stockpan, cover with water and boil another 30 minutes.
Drain once more and rinse with cool water. When cool enough to handle, pick up a small handful of the shredded jackfruit and squeeze as much water out as possible. Continue with the rest of the jackfruit.
Enjoy the prepared jackfruit in sandwiches or in tacos. To freeze jackfruit, follow the directions above.
