Instructions
Preheat the oven to 400 degrees F.
Toss together the potatoes, olive oil, herbs and salt and pepper until well coated.
Place in a single layer in a baking dish and roast for 35 minutes until crispy and potatoes are creamy and tender inside.
Serve immediately.
