Roasted carrots! This simple roasted carrots recipe requires just four ingredients and can be made with either honey or maple syrup! A must for spring and weeknight dinners.
1poundcarrots, sliced 1/4 inch thick on the diagonal
2tablespoonsmelted butter of choice*
2tablespoonsmaple syrup**
Scant 1/2 teaspoon salt*
1/8teaspoonred pepper flakes, optional
Instructions
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or a reusable baking liner, like a silpat.
Toss together the carrots, butter, syrup, salt and red pepper flakes, if using. Ensure all the carrots are well-coated and place in a single layer on the baking sheet.
Roast for 20-25 minutes until fork tender. Remove and enjoy.
Notes
*If you are using non-dairy butter, it's likely salted. If using salted butter, reduce salt to 1/4 teaspoon. I found that using a full 1/2 teaspoon salt is too much but 1/4 teaspoon is too little with unsalted butter. Therefore, I call for a scant 1/2 teaspoon. Or, you can start with 1/4 teaspoon and add more after cooking if desired.**You can also use honey instead of maple syrup.
