Slow Cooker Garlic Herb Potatoes. These potatoes are a game changer! A must-save for Thanksgiving, Christmas or any event where you don't want to use your stove/oven to cook potatoes.

Fingerling Potatoes

halved*

cup
extra-virgin olive oil

cloves
garlic

minced

teaspoon
each: dried oregano

dried basil, dried dill

teaspoon
salt

teaspoon
freshly ground black pepper
Approximately 1/2 a lemon
,
juiced
Instructions
Lightly coat the inside of a slow cooker with nonstick spray. Place
potatoes, olive oil, garlic, herbs
and
salt/pepper
into the slow cooker.
Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours, or until tender.
Just before serving, add
lemon juice
and toss until combined. Serve immediately.
Notes
*Small potatoes, like fingerlings, new or golden potatoes, work best.
