2teaspoonschili crisp, plus more for garnish (like my quick homemade chili crisp recipe)
1garlic clove, minced
1large cucumber, seeded and thinly sliced
1/3cupchopped fresh cilantro
1/3cupchopped roasted peanuts
Instructions
Cook the noodles according to package directions, then rinse in cold water and pat dry.
While the noodles are cooking, make the sauce. Whisk together the peanut butter, lime juice, soy sauce, sesame oil, maple syrup, ginger, chili crisp and garlic.
Add the sauce to the noodles along with the cucumber, cilantro, and peanuts and toss to combine. Enjoy immediately.
Notes
This makes enough for a side dish for 4-- or a main for 2. This one is great for summer, especially alongside anything on the grill!I love spicy food, so I usually drizzle on more chili crisp after plating.
