Easy Lentil Nicoise Salad! You will love this protein packed plant-based meal. Potatoes, vegetables, seasoned lentils, green beans and a shallot dressing. Gluten-Free and Vegan.

Ingredients
Shallot-Herb Dressing
2tablespoonsfinely diced shallots
1teaspoondijon mustard
1/4cupred wine vinegar
1/2teaspoonsalt
1/2teaspoonfreshly ground black peppers
1/3cupolive oil
For the Salad
1poundsmall red potatoes
1teaspoonolive oil
2cupssteamed lentils, see notes
12ouncessteamed haricot vert green beans
1/4cupniçoise olives, or other black/green olives
8cupsshredded romaine lettuce
1cupcherry tomatoes, halved
Instructions
Make the Dressing
Whisk together the shallots, dijon, red wine vinegar, salt, pepper, olive oil and 1 teaspoon of the savory herb mixture from the potatoes. Set aside.
Cook the Potatoes
Bring a pot of water to a boil, then add in the potatoes. Cook until tender, about 15-20 minutes. Drain and allow to cool slightly before slicing into halves or quarters.
Assmeble the Bowls
Divide the steamed haricot vert beans, olives, romaine lettuce, tomatoes, cherry tomatoes, lentils and potatoes among 4 bowls. Toss with shallot-herb dressing and serve.
Notes
To make this come together quickly, I use pre-steamed lentils. You can find these in the refrigerated produce section in the grocery store.
