This vegan one skillet dinner makes meal time a breeze! Crispy seasoned purple potatoes, plant-based sausage and peppers. A family-friendly dinner that doesn't require much effort or clean-up.
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the potatoes along with a generous pinch of salt, pepper and the garlic powder. Cook, stirring often, until the potatoes are softened and the edges are browned and crispy, about 15 minutes. Transfer potatoes to a plate.
Heat the remaining tablespoon of olive oil to the skillet. Add in the onions and peppers along with another pinch of salt and pepper and cook until the peppers are softened, about 5-7 minutes.
Push the vegetables to the side and add in the sliced sausage links. Cook for 3-4 minutes per side until crispy and browned. Add the potatoes back to the skillet and stir together, seasoning to taste as needed with more salt/pepper/garlic powder.
Sprinkle with parsley and serve!
