Whenever we move out of California, I have a “must” list for our next house:

1. Kitchen with ample lighting
2. A front porch with enough space for a rocking chair
3. Separate sinks in the master bathroom
4. And a giant lemon tree in the backyard

A gal can dream, right?

Mostly I want the lemon tree. OK and the kitchen with ample lighting, but mostly the lemon tree.

I know that some women prefer vases of flowers to finish the house, I prefer bowls of citrus. I love looking at my kitchen counter and seeing a big bowl of lemons, just begging to be put into sauce, dressings, water, and of course- soup.

I first put lemons in my lemon chickpea soup and the crowds have spoken- you all loved the splash of lemon juice in that soup and it works just as great in this lentil version. Lentil soup is my favorite healthy meal when I want something comforting, but not over the top in calories or fat. While I love all lentils equally, the red lentils are my favorite in soup. They almost dissolve to create a thick, soup like porridge that tastes like the creamiest soup you’ve ever had- without any butter or cream!

A simple dinner on it’s own or paired with grilled cheese, salad, or crackers. If you like easy, healthy dinners you will love this lentil one. What are your plans for the weekend? Ingredients

  • 1 tbsp. olive oil
  • 1 small onion or 1/2 large onion, diced
  • 3 carrots, chopped
  • 3 celery, chopped
  • 1 garlic clove, minced
  • 1 cup red lentils
  • 4 1/2 cups vegetable broth
  • 1 tsp. dried thyme
  • 1 lemon, zest and juiced
  • 1/3 cup chopped parsley.

Instructions

  1. Heat the olive oil in a large sauce pan over medium heat.
  2. Add the onion, carrots, celery and a pinch of salt and cook until tender, about 5 minutes.
  3. Add the garlic clove, and stir quickly.
  4. Add in the lentils, vegetable broth and dried thyme. Bring to a boil and reduce heat to low.
  5. Cover, stirring often until lentils are cooked and thickened.
  6. Remove from heat and stir in the lemon juice, zest and parsley.

      Made some this evening and was very pleased with the outcome and flavor profile. Needed a bit more salt, and I’ll probably go with cilantro next time over parsely. The lemon orzo chickpea version of this soup is a staple in my winter cooking repertoire. Will be adding this one as well. Many thanks!

      Totally agree with you on kitchens with bright light. A porch with a rocking chair sounds preeeetty good too. Lentil soups are delicious! I really love red lentils, too. Dal is usually my go to lentil soup, but I’ll have to try this sometime. I would have never thought to add lemon!

      Haha, I love lemons but never use them enough! And I totally need a kitchen with HUGE windows and light!
