Raspberry Gazpacho

I’ve had a love affair with gazpacho ever since I enjoyed it in Spain a few summers ago. Even though my grandmother made it year after year, I never quite got it. I always humbly sipped it, slurping up the lukewarm soup while eagerly awaiting the next course- usually pasta. That all changed in a tiny tapas bar in Barcelona after I ordered the house gazpacho on a whim. When in Rome Spain, right?

Silky, refreshing with just a hint of spice, I fell in love with gazpacho right then and there. Since then, I’ve made countless iterations of it, tweaking my grandmothers recipe based on what I had on hand and in season.

I’ve been on a savory fruit kick for the last few recipes (see here & here), so why stop now? Raspberry Gazpacho seemed like a natural- but unexpected- twist on the classic summer soup. Honestly, I had no idea what to expect when I first got started. A lot of things taste really, really good in my head only to fall really, really flat on the plate.

Not this soup. Fresh, textured, light, and so delicious. I love it more every time I eat it. Frozen raspberries are the hero of this dish, providing a bit of sweetness and tartness that balances perfectly with the tomatoes, cucumbers and peppers.

I purchase frozen raspberries 99% of the time when I need raspberries in a recipe. For one thing, they are a fraction of the price of fresh raspberries- with all of the nutrient content. This fact is always surprising to my clients, I think from years of messaging that fresh is best. Well, that’s not always the case.

Picked at peak ripeness, raspberries are frozen within hours of harvest—often on the same farm as they were grown. This is important as once a ripe berry is picked, its susceptible for nutrient (vitamin, antioxidant and mineral) loss. Flash-frozen hours after being picked therefore locks in as many of the nutrients as possible, making frozen fruit just as if not more nutritious as the fresh version.

A one-cup serving of frozen red raspberries has roughly 80 calories, and provides 60% of the daily vitamin C requirement and 36% of the daily fiber requirement. We all know how I feel about fiber for weight management and gut health (❤️) so if you’re looking to include more in your diet, add in more frozen raspberries!

Gazpacho lovers fall into two camps: texture or silky. I’m in the latter, I prefer my gazpacho almost like a smoothie, with chunks of garnish to stir into every bite. Therefore, I’m calling for pureeing all of the ingredients together in a blender or food processor. If you like a little more heft to your gazpacho, you can pulse it into very fine chunks instead of a puree.

Either way, don’t skip the garnish! Toasted cubes of bread, hunks of juicy tomatoes and peppers and of course- extra frozen raspberries.

This soup only gets better with time, so make it in the morning to serve later in the day. Letting the ingredients marinate together concentrates and chills the flavor; serve either straight from the fridge or at room temperature.

Ingredients

  • 1 cup frozen raspberries, plus more for garnish
  • 3 large, ripe tomatoes, chopped
  • 1 cup chopped red bell pepper, plus more for garnish
  • 1/4 cup white onion
  • 2 garlic cloves, chopped
  • 1 cup peeled and seeded cucumber, plus more for garnish
  • 2 tablespoons sherry vinegar (can sub lemon juice)
  • 3 tablespoons olive oil, plus more for drizzling
  • 2 slices bread, toasted and cubed
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly cracked pepper

Instructions

  1. Put the frozen raspberries, tomatoes, bell pepper, onion, garlic, cucumber, vinegar, olive oil, half of the bread cubes, salt and pepper in a blender. Process until smooth, adding up to 1/3 cup water if necessary. (Work in batches if not all the ingredients fit in your blender at once.)
  2. Taste and adjust the seasoning as needed. Refrigerate for up to a few hours before serving for best flavor.
  3. To serve, toss together the remaining bread crumbs, raspberries, chopped bell pepper and cucumber together with a small pinch of salt and pepper. Divide the gazpacho among 4 bowls and garnish with the bread mixture.

      I remember the first time I had a fruity gazpacho – it was a watermelon one that I immediately went home to recreate! I love the raspberry idea here. I bet it’s fabulous with the tomato!

      What a gorgeous soup Alex. I love gazpacho but have never tried one with fruit. So that needs to change. I’m loving the frozen raspberries too, a great way to keep delicious and nutritious on hand at all times!
